Fig and goat cheese toast

  Sometimes it doesn’t take a whole lot of work to make something really decadent.  I love those times.
  Especially for parents of little ones, it can be far too easy to slip into a routine of boring, practical choices.  But when a special breakfast can be as easy to make as the same ol’ peanut butter toast, why not indulge yourself?

  I hesitate to even call this a recipe because it’s so simple.  Your bread is toasted, cheese is spread on it and then jam is put on top.  Most grocery stores carry goat cheese and I would hazard a guess that if your store has an “international” food section, they will probably have fig jam.  If not, you can get a similar flavor by substituting cream cheese for goat cheese and another jam for the fig.  I’d suggest a berry or marmalade.  I’m pretty sure grape would be painfully bad.
  Try it out and let me know what you think.  The idea actually came from a fig and goat cheese bruchetta appetizer that I had at a fancy-pants restaurant, but even G is a fan!
