Orange-Glazed Chicken

  I have achieved toddler meal nirvana!  G liked everything in this meal…even the tomatoes!  I’ll share the recipe for those on Thursday, but today we’re making chicken.
  Here’s what we’re making:
Here’s what you need:
4 chicken breast halves
2 Tbsp orange marmalade
1 envelope Shake ‘n Bake type coating
  Preheat your oven to 400 degrees.  Rub your chicken with the marmalade and then thoroughly coat in breading.  I find that a large, shallow bowl is the best way to do this without making an enormous mess!
  Put your chicken in a large baking dish and bake for around 25 minutes (or until cooked through).  I like to flip my chicken halfway through to make sure both sides get crispy.
  Slice and serve.  What an easy main dish, right?
  The marmalade adds just a touch of orange sweetness (just enough to entice a toddler to scarf down most of a turkey-sized breast) but isn’t overwhelming.  Try it out, and look for the tomato recipe on Thursday!
