Beans are one of those “miracle foods” that you always hear about. They’re full of fiber and protein and they actually lower your cholesterol. The only problem is that it isn’t always immediately obvious what the heck to do with them other than making chili.
This side salad is a great way to get more beans into your diet in an easy, delicious way.
Here’s what we’re making:
Here’s what you need:
1 can Northern beans (drained and rinsed)
1 can dark red kidney beans (drained and rinsed)
1/4 cup onion, chopped
2 Tbsp dried parsley (or 4 fresh)
1/4 cup Hot Rod Bob’s Greek Salad Dressing*
1/2 cup tomato, chopped
1/2 cup green pepper, chopped
*This is a Michigan based company and I’m not sure how widely available it is.
I’m sure another Greek dressing would work in a pinch.
Combine all of your ingredients into a bowl and stir well. Chill for 30-60 minutes and serve.
Be warned that if you don’t like green pepper, this probably isn’t going to be your cup of tea. You can always switch in a red pepper if you prefer, but the pepper will be a large portion of the flavor of this dish regardless.
G always likes this when we’re able to trick him into putting a bite in his mouth…but we always have to trick him. I love this and will sometimes have it as a light lunch all on its own. My Mr. is kind of on the fence, not loving and not hating it. He prefers it when I go a hair lighter on the dressing than I like.
Try it out. If you don’t like, it you don’t ever have to make it again (I promise!)…and if you do like it, you’ve got another way to get wonderful, healthy beans into your diet!
